To set the labels for a team, you will need to have permission to configure the team.
Click on the Configuration cog
From the 'Team Configuration' click on Navigation option, you can add or remove labels:
Labels for teams are shown on the team dashboard and organisation maps.
An example below shows how you could categorise teams by their physical location
