Any thoughts on using Salesforce for tracking customer success & adoption? Or is there a better thing out there?

You can consider ChurnZero or other specific CS softwares. 

ChurnZero is focused on the onboarding and NPS-like stuff instead of deeper adoption and usage metrics. A lot of companies use product analytics tools like Amplitude/Mixpanel (for web applications) and Moesif for API products to track who got implemented today and their usage levels. The key item is getting your CRM to sync account/subscription info with the product analytics tool of choice. You can use third parties like Segment for this or many analytics tools already have plugins.
