Is there a best way to respond to an investor who seemed like a "warm" lead (e.g. good partner meeting & feedback) that says they would like to do a check-in in 60 days?

That could be taken as a "no". Try to put a little time pressure on them and say something like "happy to chat any time, but we cannot guarantee we'll still have a spot for you in the round then".
