If you don't have a vacuum sealer it is no problem! You can easily create a natural vacuum seal using just plastic bags and the power of displacement using the immersion method. This is the most popular method to quickly vacuum seal because it requires no special equipment and is very effective.

If visual learning isn't your thing, here are some written instructions
1. Simply put the food in the bag and seal it until there is about fingers width left unsealed at the top.
2. Then submerge the bag in the water until the top the bag is just above the water line.
3. At this point, the air will naturally escape out of the top and create a nice natural vacuum seal, and you can simply seal the rest of the top of the bag, and voilá you have hacked the "vacuum seal."
*One tip we have learned execute this method in cool water as opposed to directly in the cooking bath; ANOVA-warmed water may not be boiling, but it sure can get HOT! Save your fingers by either using the immersion method in a separate container of cool water or do it in the cooking bath before it heats up.*
