If you want to display a flat fee of $1,000 for 6 photographers, you can simply leave the time field blank and enter the quantity and rate. See picture below. 

Here, I've left the "time" field blank so that you end up with the appropriate quantity and rate to resemble a "flat fee". If you wanted the phrase "flat fee" to be included in the line item name, you can edit that at the item catalog level in the line item name field.
