If the activity has nothing to do with a customer you can, instead of selecting a customer to link the activity to, create an internal account. For example, you can create one for yourself as a user or for the company. See examples below.
Start by creating an account for internal activities. Then create one or several contacts linked to the account, for example the sellers in your team.
