You can see all details of students course work (including students workspaces) by Export Course Data. Individual assignments data can also be exported separately if required. See export assignment data for more details.
How to get course data for all the students (Exporting Course Data)
As deleting a course will also delete all the students data, teachers/professors can export all the students data before deleting the course
