What will happen if I add "Assign Value" action and there is no variable in the application data tab it should apply to?

If there is no variable in the specific application that "Assign Value" action refers to, nothing will happen from the point of UI. However, the system will record the value it should assign to this variable, so in case you will add the variable to application data tabs afterwards, it will have the assigned value.
