This help article describes the number of outputs you can use on an Apple M1 Mac Mini

Apple M1 Mac Mini can only support 2 video outputs, this includes the main ProPresenter output (seen by your audience), and the main computer display (seen by the operator).

This being said, you can expand your outputs by purchasing a supported external video card. Only supported cards will function with ProPresenter. However, the outputs on the external card only function when ProPresenter is open and will not be seen as a extended display. Meaning anything you want displayed on the displays (not including the operators display) must be routed through ProPresenter.
