Where can I set the cashback/rewards amount?

First, go to Rewards and make sure that the Rewards toggle is “On.” Once you've done this, you can set the cashback/rewards amount under the Amount tab and click Save.

Can a trigger be set to determine when the goLoyalty emails will be sent out?

Yes! You can set it under the Trigger tab. Kindly verify that it matches the Order Status configuration on your BigCommerce site.
