Answer:
If you have multiple Pipelines, you can choose one to be your default Pipeline.
Go to Settings > Organization > Pipelines
Choose a Pipeline from the drop down
Select Make Pipeline Default
Additional Information:
You can not currently re-arrange or customize the order of Pipelines, these are listed in the order they are added.
