Users have an option to turn on/off our standard task types from App Setup > CRM > Tasks. If you turn a task type off, it will not appear in Task manager and it will also not show when you try to create a new task.

In above example, the “General” type is turned off. So it would not appear under Task Manager. However, we will still show it in prospect profile to avoid any confusion or missing the task.
