Do I have to move deals between stages on the board myself, or does the platform move them for me?

Which stage moves happen on their own and which ones you make yourself.

Both, and you can override it any time. Your deals board works like a Kanban CRM, so you can drag a deal into a different column whenever you want it to reflect where things really stand. The board also advances deals on its own when something happens on the deal: submitting to a lender moves it into Shared with External, and a lender decline or a funding moves it to the matching column. Each lender you submit to gets its own tile, so one business can sit in several columns at once while different lenders work it. If a deal lands in a column that does not match reality, just drag it back, nothing breaks.
