Go to the products back office (cocktail glass icon).
In the left menu, click on "Labels" and click on "+" to create a new label set. Give it a name, for example "Allergens".
Then click on "+ New label", and name your label (for example: "Crustaceans").
Once your labels are created, select the relevant product, click on the blue "Labels" button and choose the desired label.
