If your Ooni Koda 12 exceeds 932˚F / 500˚C follow the steps below:
Make sure you’re using the correct gas tank. If the tank is too large, the flame may become overpowered.
Make sure you’re using the correct regulator. If the regulator is the wrong mBar, it may be letting through too much gas.
If your Ooni Koda 12 is not exceeding 932˚F / 500˚C but is too hot for your style of cooking, follow the steps below:
Turn your heat control dial to maximum and preheat your oven and stone for ~20 minutes.
Once your oven and stone are preheated to 750ºF / 400ºC or higher, launch your pizza.
Immediately after launch, turn your control dial down to minimum to lower the flame.
Rotate your pizza as necessary and monitor closely.
Tip: You can even turn your flame off completely to cook your pizza using the ‘low and slow’ technique.
If the ceiling of your oven looks like it’s glowing:
If the ceiling of your oven looks like it's glowing, don’t worry - this is simply caused by a buildup of carbon/soot.
To remove the carbon/soot, wait until your oven is completely cool and then wipe down with a dry paper towel or rag.
