Daily Sales is typically the total sales, and breakdown, of the sales processed via your Tills or POS System. The sales reported on your End of Day/Z Report are what you'd usually enter here.

(If you're a Polaris POS customer, these sales will likely import automatically from POS when you run your end of day process.)

Expected Takings - Enter the total sales as supplied by your Z report or End of day till report.

Takings Declared - The physical monies you have in your tills for the day (i.e. minus your float(s), BUT including credit card payments, 3rd party payments and any petty cash paid out). In an ideal world, this would always balance back to the sales you've processed through the till, but this isn't always the case. A variance will be generated if your Takings Declared are less than the Expected Takings i.e. If the till expects £1000.00 and you have £999.90, there would be a till variance of -£0.10

Now define how your sales are broken down;

FOOD - Enter the total of Food Income from your Till Report, this will automatically calculate the LIQUOR figure by default. Please contact support if you want this changing.

You may have other optional Sales Streams within your business; Accommodation, Merchandise, Room Hire etc, if so, just enter the totals as per your End of Day/Z Report in the same way as you would the Food.

TILL VARIANCE - is the difference between your EXPECTED TAKINGS from your Z Report and your TAKINGS DECLARED. By default, any variances will be taken into account into your Liquor Takings, rather than affecting your food margin.
If you want to report Till Variances separately, please speak to the support team.

COMMENTS - this is an optional textbox to enter any notes from the day for internal reference; i.e. issues during the day, particular reason(s) why sales were high/low or any other details relevant to the day.

**Optional**

DEPOSITS:
You can choose to declare the total of your deposits received/redeemed/forfeited each day on this Daily Sales Screen or alternatively they can be declared separately on Sundry Income (Received) and Expenses (Redeemed/Forfeited)

DEPOSITS RECEIVED - Total of deposits taken on this day, will pull through to the deposits module to be assigned out to individual bookings

DEPOSITS REDEEMED - Total of deposits redeemed this day, this is also where deposits refunded are entered.

DEPOSITS FORFEITED - A deposits that not refundable to the customer, but needs to be cleared from your outstanding deposit list. This increases the actual total income into your business on the day it's processed so that your EOD banking is not adversely affected.
