What is Labour Deployment and how can it help?

What is Labour Deployment?

The Labour Deployment feature within Polaris Data gives a visual guide on how many employees you should have scheduled at any point during the day

This graph will sit at the top of your rota screen(s) to aid in scheduling - giving you a real time visual of ACTUAL HOURS scheduled vs. RECOMMENDED HOURS.

How Does It Work?

The labour deployment function uses 4 main indicators to create the recommended deployment;

  1. SALES FORECASTS - it's incredibly important you forecast your sales as accurately as possible, so the system can accurately recommend the required number of employees.

  2. PREP HOURS - These are the "minimum" number of team members required outside of your opening hours (i.e. you'll need a Manager and/or BOH employee to open up in the morning to prepare the venue prior to trade)

  3. SALES PER LABOUT HOUR (SLPH) - This metric determines how much £ sales can be generated for every 1 hour worked during the day. This is added into the setup for each Labour Department at each site and can be tweaked/adjusted as you see fit.

    SALES FORECAST ÷ SPLH = RECOMMENDED NUMBER OF HOURS

    **For reference, the industry standard for SPLH is approx £95. This number won't fit every business model, so may vary dependent on your business. Speak to your Polaris Account Manager if you require assistance or guidance with this**

  4. SALES HOURLY SPLIT % - This is centrally uploaded and controlled by Ops/Admin. This is assigned on a site-by-site basis and the hourly % will be applied to your daily sales forecasts to allocate a % of the daily total to each hour of the day. This will enable the tool to suggest the deployment throughout the day to take into account the peaks and troughs of sales.

How Should It Be Used?

Simply by using the graph, built directly into the rota planner (both DAILY VIEW and STANDARD VIEW), to reference and schedule employees accordingly.
