SPLH is the metric determine how much £ sales can be generated for every 1 hour worked during the day. This can be configured by individual dept to dial in deployment that's as accurate as possible.
The easiest way to do this via the LABOUR DEPLOYMENT menu as part of your higher-up console login. Select the SPLH Setup from the menu and you'll be greeted with the Departments you have setup for Labour reporting - along with your Sales Revenue Streams and a column for the SPLH value you wish to use.
(An industry "standard" value would be considered as approx £95 - so this may be a good place to begin.)
There are two main principles that need to be configured and are configured on a PER SITE basis;
the SPLH value for each Labour Dept.
the % of sales from each revenue stream that you wish to use when calculating the required labour.
e.g. BACK OF HOUSE labour hours and costs would directly correlate to FOOD - so you would use 100% of the food revenue vs your SPLH value when calculating the require labour deployment for your BACK OF HOUSE team.
However, you might only want 50% of the food sales but 100% of the drink sales when calculating SPLH deployment for your FRONT OF HOUSE team.
TOTAL SALES: £2000
FOOD SALES: £1500
DRINK SALES: £500
SPLH: £95 for both FOH and BOH
Based on the scenarios above, the calculations would be:
BOH: (100% of Food sales) 1500 / 95 = 15.78 labour hours (16 hours)
FOH (100% drink sales+50% food sales) (500+750) / 95 = 13.15 labour hours (13 hours)
There is also week selector, which allows you to pre-empt changes to future rotas, where you wish to use updated SPLH values (i.e. you don't wish to disrupt weeks that have already been forecast by your teams, but wish to update the SPLH assignments for future weeks yet to be forecast.
All of these values can be updated assigned as far ahead into the future as you wish.
