PREP HOURS are the "minimum" number of team members required outside of your opening hours (i.e. you'll need a Manager and/or BOH employee to open up in the morning to prepare the venue prior to trade).
These can be added to reflect ONLY work hours required outside of opening times - or you can utilise this to fix in a 'skeleton' rota - i.e. regardless of the sales, you will need a Manager, Chef and FOH team member just to open the doors.
Any prep hours added are ADDITIONAL to the Sale Per Labour Hour that the system will calculate based on the Sales and SPLH value that are set.
You simply enter the number of employees, by hour, for each dept that you require on site REGARDLESS of any sales.
Once you've added the relevant Prep Hours/Employees for each dept for the 7 days of the week, simply click SAVE in the top right hand corner of the screen to apply the changes. They will apply as of the week you have selected in the WEEK SELECTOR at the top of the page.
You can update these values for future weeks ahead of time (i.e. if you require a different skeleton rota in the summer weeks/months vs winter).
