Yes, Prisync tracks the availability of products across websites, indicating whether they are in stock or out of stock. You can also set up daily stock change notifications.
Please keep in mind that, by default, out-of-stock products are included in Excel reports and position calculations. You can change this in the Settings >> Preferences page.
