I want to know why I still receive events from older releases after creating a new release.

Resolution
Creating a new release doesn’t automatically stop older releases from sending events. Those events can still come from clients running an older build - for example, cached web assets, older local checkouts, or mobile users who haven’t updated yet.
If you want to stop events from older releases:
On a Business or Enterprise plan, add those release names under Project Settings → Inbound Filters. See filter by release
On a Developer or Team plan, create a new client key under Project Settings → Client Keys (DSN), ship that DSN only with new builds, then disable the old key so events from the old DSN are dropped.
