Go to Deals, and find the specific deal you want to select a template for, OR pull up a set of deals you want to update in bulk.

Unlock the deal, then go to the Statements section and click on the Options tab.

On the option tab, select the template.

To select or update templates for multiple deals in bulk, go to Admin in the top menu bar > Select Statement Templates > Select to replace template for the appropriate deal type.
