Click on Garage Resources

This opens on the Mechanics page

Select the Mechanic you want to delete

Click on the trash bin icon on the top right hand side

You have the option to assign this Mechanics' active tasks to another mechanic. If you want to do this, select their name from the drop down list, then click Delete

If you don't want to reassign active tasks, click Delete.
