It’s normal to see your blood sugar levels rise and fall after eating anything that contains carbohydrates. Some foods will trigger ‘unhealthy’ responses. Others won’t have much of an impact at all.

A ‘healthy’ blood sugar response will usually:

  • Have a smaller spike

  • Return to baseline levels fairly quickly

  • Little or no dip below baseline before stabilizing

An ‘unhealthy’ blood sugar response will generally:

  • Have a bigger spike

  • Take longer to return to baseline levels

  • Dip below baseline levels before stabilizing
