If your contractor is company, rather than a single individual, add them as a contractor in the usual way, but instead of filling in a contractor's name, fill in the name of the person at that company who will be signing contracts with you. Then edit the contractor's information (by clicking on that contractor's name on the contractor screen) to establish a "company name" for that person. When creating contract templates, you can use the variable {{contractor_company_name}} to refer to the name of the company, and the variable {{contractor_full_name}} to refer to the person who will sign the contract.
