Is there a way to undo changes I've made on a booking?

The Change Log can help you see what changes you made on bookings and proposals - not exactly an undo button, but close!

Start by going to Sales --> Bookings or search for the booking/proposal

To see what changes you've made to a booking or proposal, click the Manage Booking button then select Change Log.
