You sure can! While creating or editing an Intake Form in Settings, you can select the Pipeline and the Stage in that Pipeline, where the newly generated Booking will begin:
On the left-hand side, click on Settings
Select Tools
Select Intake Forms
Hover overon the Name of the Intake Form you'd like to update & Click Edit
Click the Submit Settings tab
Select the relevant Pipeline + Stage
Click Save
