Answer:
When creating a Document from a Template on a Booking, you will be given the option to select one or multiple Events to link. While the Document can be connected to multiple Events, the Event that is listed as Primary is where the merge fields will pull the majority of the information.
To change the Primary Event, click the Make Primary button next to the appropriate Event name.
