Answer:

Invoices in Event Temple are designed to update automatically as changes are made to the Booking so that manual updates are not necessary. As such, there is no ability currently to lock Invoices like Documents. If this is a feature that you would like to see implemented, please see our feature request in our feedback portal!

You may also be interested in our Quote feature which allows you to manage Items on independently of a Booking.
