Answer:
Stripe can be turned off it off in Integration Settings by an Admin user.
Select the Settings tab from the left-hand sidebar
Select Integrations
Click on Stripe
Press the Red "Revoke Access" button to fully disable Stripe.
Please note, this does not cancel your account with Stripe. Please reach out to them directly for this.
