By design, you can't delete a picklist value from your custom field's configuration if it's used somewhere in the product, including on archived objects. You get the following error if the value is in use:
Hyperproof does allow you to delete the entire custom field configuration. If you delete the configuration here:
You get a warning that all fields using that custom field in the product will be cleared (which you may want to do).
Another option, if you don't want to delete the whole configuration, is to do a mass search and replace it with a specific picklist value. For example, if you have a custom field on controls, go to the Controls grid view and click the filter icon:
Using the Filter, you can search by a custom field value. Find the drop-down for the custom field and select the picklist value you want to delete like this:
Select controls by checking the checkboxes next to each one, or select all by checking the box at the top left of the list. From the top level controls menu, click the ellipses (... overflow menu) and select your custom field from the dropdown, like this:
A popup displays asking you which picklist value to change to. Select a new value.

Be sure to repeat the process for any archived controls.
After you make this bulk change, the custom field value will not be used on any controls. Because the value is not in use anymore, you can delete the picklist value from your "Settings > Custom fields" configuration screen. Select the Edit link for the custom field to remove the value.
