If you're seeing a password prompt when trying to delete Roots, this is an iOS "Screen Time" passcode — it's set at the iPhone level, not within Roots itself.
This can sometimes be enabled without you realising it — whether you set it up a while back, or a "Family Sharing" organizer set it — and it may not have come up before now since iOS didn't always require it to remove Screen Time apps like Roots.
How to reset your "Screen Time" passcode
Here's how to reset it:
Go to iOS Settings > Screen Time
Tap "Change Screen Time Passcode"
Tap "Forgot Passcode?"
Enter your Apple ID and follow the steps to set a new passcode

If your device is managed through "Family Sharing"
If your device is part of a "Family Sharing" group as a child's account, the Family organizer will need to reset the passcode from their own device, not yours:
On the organizer's device, go to Settings > Screen Time
Select the child's name under Family
Tap Manage Screen Time
Tap Change Screen Time Passcode
