You can set second image of the product or variant as the swatch image. For this, select a swatch-based style for the options or group. Then, in the following dropdown, you will see four options:
1) First variant image
2) Second variant image
3) Last variant image
4) Color/custom image
You can select the image which you want to display as the swatch image.
