How can I adjust a credit card payment for an order with an open balance from a day prior?

If the payment has already been captured, it cannot be updated. Any due balance will need to be paid with a new payment, even if it is the same card. If the guest is not available to pay the remaining due balance, you may need to discount the remaining balance to close the check.
If a pre-authorized card is declined when you close the check: You can't charge the original pre-authorized amount after the final charge is declined. A pre-authorization only checks the card and is voided right away; it doesn't hold funds you can collect later. Collect the balance with a new payment from the guest. If the guest has left, you may need to discount the remaining balance to close the check. To reduce declines on tabs, consider raising your minimum pre-authorization amount.
