Baker's % and Workflows can be used in Edify to guide the production of baked CPU goods that have been ordered.
They work in tandem to allow the scaling up/down of your recipes, and ensuring your team know what they should be doing each day.
Baker's % (also known as Baker's math or formula percentage) allows you to input the proportions of ingredients in a recipe relative to the flour weight. While Workflows allow you to set a schedule for when production steps should be completed in preparation for deliveries - using the Baker's % to correctly identify the quantity of ingredients required.
Setting up a Workflow and Baker's %
Setting up a Workflow
We recommend starting by creating your Workflows.
Navigate to Recipe Workflows within the menu sidebar
Click "Create Workflow"
Name your workflow and add a description of the workflow
Create a step in the workflow:
Name the step
Add a description of the action completed during the step
Input the number of hours before the delivery day end that this step should be carried out
Click "Add Step" to add further steps
Click the bin icon to delete any steps
Once completed click "Create Workflow"
We calculate backwards from the end of the delivery day. For example, if you want a step completing 6am on the delivery day you would input 18 hours.
You can have as many steps as needed in a workflow, we'll automatically order the steps using the 'hours before' input to identify which steps need completing first.
Your workflow can now be applied to any recipe that has Baker's % switched on
Example
You might produce Spelt dough that is used across multiple different loaf types. The dough needs to start being prepared two days in advance of an order.
Your workflow might look like this:
Setting up a Baker's %
A workflow can only be applied to a recipe if it has Baker's % setup.
Navigate to Recipes in the menu sidebar
Search for the recipe you want to set a Baker's % and workflow for and click "Edit"
In the "Ingredients" section of the recipe you will see a Baker's % toggle which is turned off by default, toggle it on
Two new columns will appear "Flour" and "%"
Use the tickbox in the "Flour" column to mark which ingredients are the flour ingredients
Use the "%" column to input the % of each ingredient
You can also setup a Baker's % when adding new ingredients. When you click "Add ingredients" as well as the name and quantity you will be able to tick if the ingredient is a flour and its Baker's %.
Example
For this Olive Spelt Bread recipe there are two different types of flour. These are both ticked as flour ingredients and the % of each flour used is inputted. These should always add up to 100%.
The remaining ingredients have the % used relative to the flour weight.
Adding a workflow to a recipe
Once your workflow is setup and the Baker's % has been set for a recipe you can add the workflow to the recipe. It's possible to add a workflow to multiple recipes, however the recipes will need to have consistent Baker's %'s set.
On the recipe page scroll to the bottom of the page where you will see the "Workflow" section
Search for the workflow you would like to assign in the dropdown and click "Assign"
The workflow will be shown - you should now add the ingredients relevant to each step
Click "Edit" on the step
Click into the "Select Ingredients" box and select the ingredient(s) you want to apply
Click "Save"
To remove an ingredient from a step just click "edit" then click the x next to the ingredient name. Remember to click "Save" to save the change.
Example
Only add the ingredients to the steps during which those ingredients are used. In the below example flour, salt and levain are all used in the first "Weigh" step - but no new ingredients are added in the "Rise" step.
The ingredients added to each step can be unique to the recipe. For example the above recipe adds olives during the "Add toppings" step, but you may have another recipe which uses the Spelt workflow that adds rosemary sprigs.
When you setup the workflow for that recipe you would simply add the rosemary sprigs to the "Add toppings" step.
Using the Workflow View
Once your Workflows and Baker's % are setup on a recipe you can begin using the Workflow View within the CPU Production Summary to see what steps need completing each day for each workflow to produce the amount of orders you've received.
Daily View and Weekly View
These views show you the products that have been ordered and so need producing per day and per week (up to 10 days). They're a good starting point for assessing upcoming orders before diving into Workflows.
Navigate to CPU > Production Summary and choose the relevant tab.
Daily View
In this view you are shown in the QTY column the total quantity of a product which needs producing, and also breaks this down per customer/site in individual columns.
You can use the date picker to choose the date you'd like to review.
Weekly View
This view shows you what needs to be produced over a multi-day period. You can use the date picker to select up to 10 days of orders.
In this view you are shown in the QTY column the total quantity of a product which needs producing over the date period selected.
This is then broken day per day in individual columns.
Both of these views are printable, just click the "Print" button in the top right.
Workflow View
Select the workflow view tab within the CPU Production Summary section.
If you have previously selected a date in the Daily View or Weekly View this will automatically be applied in the Workflow View.
In the dropdown select the workflow you are working on
Use the date picker to change the date if required
You will be shown the Steps from this workflow which need to be completed on the selected date.
Within each step you will be shown the amount of products this step will be producing and the delivery date.
If ingredients are required during a step these will be shown in a table alongside the quantity of each ingredient required to produce the amount of products required.
Example
On this date I have just one step I need to complete.
I am weighing up the ingredients to produce two different products which both use the Spelt workflow.
These are shown underneath the step description, in this example they are 6 'Spelt Bread - Rosemary' and 12 'Spelt bread - Olive'.
The quantities of ingredients shown are the total amount needed to produce the 18 breads. These quantities are calculated based off the recipes for the two breads and the Baker's % that have been set.
If there are multiple steps which need to be completed on a selected day you can use the dropdown arrow to review each one.
If the ingredients within the step differ per recipe these will be split out.
Example
On the selected date I both have to complete the 'Add toppings' step and the 'Bake' step.
During the 'Add toppings' step different ingredients are used for each of the recipes. These are split out into two different tables.

How do I work out how many hours to input on my workflow?
The Edify system will count backwards from the end of the delivery day.

So for example, if you would like a step completing at 6am the day of delivery you would input 18.

Can I edit a workflow I've previously setup?
Yes you can edit a workflow you have previously setup. Just click the pencil icon next to the workflow, make the edit you require and click "Update Workflow"
Can I delete a workflow?
Yes you can delete workflows, just click the bin icon by the workflow you need to delete. You'll receive a popup asking you to confirm you'd like to delete this workflow, click "Yes".
Why can't I add a workflow to a recipe?
Only recipes with Baker's % toggled on and setup can have a workflow applied to them. Ensure this has been done for the recipe you are trying to set a workflow for.
What permission level do I need to setup Baker's % and Workflows?
Users with Admin permissions and those with Manager permissions the the 'add/edit recipe' permission granted can setup Baker's % and Workflows.
