Answer:
The notification "Error creating order in Mews. Invalid JSON." will appear when the Primary Contact of the Booking is not synced correctly with Mews.

To resolve this you will need to resync the Booking's Primary Contact with Mews:
If the Customer exists in Mews
Click on the Primary Contact's name, this will take you to the Contact Summary Page
Click Unlink
Click Link to Mews
Click Use Existing
Search for the Customer
Select the Customer
Click Link
The existing Contact will now resync to Mews & you will be able to send your order as expected.
If the Customer does not exist in Mews
Click on the Primary Contact's name, this will take you to the Contact Summary Page
Click Unlink
Click Create New
Click OK
The Contact will now sync to Mews & you will be able to send your order as expected.
