Answer:
Your Stripe descriptor is set in Stripe. If you do not set a Stripe descriptor in Stripe, it will automatically use your Event Temple Organization Name.
Log in to Stripe.
Click on Settings in the top right hand corner.
Under the heading Your Business > click on Public Details
Scroll down to the fields Statement Descriptor
Input the desired details
Underneath there is a field for Shortened Descriptor
Input the desired details
Save the settings
