Answer:
Event Setup Styles are part of the Setup Values and can be edited in Settings by Admin users or Chain Admins if you are part of a Chain.
Click on Settings
Select Fields
Choose Setup Values
Click the Edit Pencil for Event Setup Styles
From here you can Edit/Add/Archive and Delete
