If you decide to change a tech's commission percentage through Settings/Users & Routes, new Work Orders (not already created through recurring series) will have the new commission percentage.

Existing Work Orders must be edited by editing the singular Work Order or click the Edit Series button. 

Many companies pay different commission levels based on the service type (i.e., a higher percentage for harder jobs), so an auto update doesn't work in those scenarios.
