From Heart Smart program week 9 :
Steaming vegetables is an easy fat-free way to get your veggies nice and tender, which can be a blank slate to take on other flavors.
Sautéing vegetables and meat in a little bit of oil creates a nice sear and brings out the natural flavors.
Pressure-cooking is a perfect hands-off cooking method for grains, dried beans, soups, and stews.
Blanching vegetables keeps them crispy and bright, and enhances their natural flavors.
Caramelizing is most popular for onions, but this low-and-slow method will bring out the natural sweetness of any fruit or vegetable.
3. Perfecting Flavor Profiles
Balancing flavors (sweet, sour, salty, bitter, umami)
Using herbs and spices for depth
Building flavor layers in dishes
When to add dried vs fresh spices
Tasting and adjusting seasoning
From Heart Smart program week 9:
Heart-healthy spices like turmeric, ginger, cinnamon, garlic powder, and cayenne pepper add nutritional value to your plate – but all spices are great for flavor.
Seasoning blends take the guesswork out of seasoning meats and vegetables, but watch out for sneaky sodium! Making your own seasoning blends with no (or very little) salt is the way to go.
Fresh herbs are rich in vitamins, have anti-inflammatory properties, and add flavor when used as toppings or in marinades and sauces.
Citrus fruits like lemon, lime, orange, and grapefruit brighten up any meal and have incredible health benefits. Try squeezing a lemon over steamed veggies, or making your own salad dressing with fresh orange juice!
