Forecasting Assorted Recipes

How to forecast assorted recipes: enter a placeholder when options aren't yet known, or a confirmed selection once they are.

What an Assorted Recipe Is on a Production Record

An assorted recipe is a group of recipe options placed on the menu together. The school team chooses which specific options to serve from the assortment on a given day. For nutrition compliance, Gaia treats an assortment as the minimum nutritional value across its options, so assortments are intended for recipes with identical credits.

Two Ways to Forecast an Assorted Recipe

Placeholder Forecast

Use a placeholder forecast when you do not yet know which items from the assortment will be served. The placeholder reserves production capacity for the assortment as a whole without committing to specific options.

  1. Find the assorted recipe on the production card.

  2. Enter a total number of servings in the forecast field for the assortment.

The placeholder remains until you commit to specific options.

Confirmed Selection

Use a confirmed selection once you know which options from the assortment will be served.

  1. Check the boxes next to the specific items you want to include.

  2. Click the Forecast button that appears.

  3. The selection is committed and the assortment is broken down into the chosen options on the production record.

Changing a Selection

To change which options are included after committing, right-click the recipe and choose Reset Assorted Recipe. The assortment returns to a placeholder state so you can pick different options.
