If you are on the newest version of Atlas you can go into your theme settings, select the buy button section, and adjust the text directly.
If you are on an older version of Atlas. You can go into your online stores -> themes. Next to the customize button select the 3 dots. Then select Edit default theme content and search for "Add to Cart." You should see an input field that allows you to adjust the text.
