The sign-in step, Continue with Google or entering a name and email, creates your client's Client Portal account. That account is what lets them save progress, come back later, upload documents, and work on the application with you.
The email is required so the invitation and portal access are tied to the right person, and so notifications about messages and updates reach them. Continue with Google makes it a couple of clicks for most clients.
