Yes, the best way to change a menu from colored to white with black text is to first make a copy of the menu. Select the FILE option in the upper left, then select Make a Copy from the drop down list. Give the copy a name and the software will route you into the copy.
Once you have the copy open, it is best to change all of the fonts to black first. This will make it easier to see the text once the background is changed. To change the font color, select the text box on the design area, then select the Style option in the upper left.
