On a song project, the writers are what populate in the Composers iTunes field. The easiest way to add a writer is to go to the Rights info tab and click the Add Writer button.

After clicking the Add Writer button, you can create a new writer or pick an existing one from your Network. These names will then write to the iTunes Composers field.
