The AI Assistant can write a survey, get it out, and make sense of what came back. Surveys (under Forms) and Employee Pulse (under Insights) are separate features, but you can ask about either the same way.
Reading results is where it helps most. Counting multiple choice answers is easy enough on your own, but the free text box is where the useful stuff hides, and nobody has time to read four hundred comments. The Assistant reads them and tells you what people actually said, including the themes you weren't looking for.

Good to know
A survey can only be edited while it's still a draft. Once it's out, changing it would lose the answers already in, so the Assistant suggests a fresh one instead.
Surveys are ended rather than deleted.
There's no way to schedule a survey launch for later.
