To redo a grid simply tap on that grid again in the editor and you can record that frame over. In the recording menu you can also simply tap on any grid you want to redo and it will automatically switch to record it again. 

If you want to switch layouts after you start recording unfortunately that is currently not possible due to the way layering of recording and keeping everything in sync works. So please plan the layout and tracks ahead of time before you start recording.

If you have a recording that is completely done and you have upgraded the app with an In-App purchase you can try to import the video as a guide video and record more tracks to it if it can fit in one of the layouts.
