If you want to keep pre-orders active for most of your catalog but disable them for a specific variant, you can override the product’s preorder settings directly. Just follow the steps below based on how preorder was enabled.
Go to the Preorder Products tab.
Search for your product and click on the variant to open the edit settings screen.
Disable the Preorder for this variant.
This will apply a variant-level setting that prevents this item from being available for preorder.
If Pre-Order Was Enabled via the Tags Tab
Go to the Tags tab.
Find the tag setting responsible for enabling preorder for the product.
Delete it.
