To track Abandoned Checkouts (Carts) simply just go to the Store Tab -> Settings -> General. At the bottom of the page, you will see a dropdown to adjust the period after which a checkout/cart wasn't completed will actually be marked as Abandoned.
This will create an abandoned cart item in Orders -> Abandoned
