When a delivery or pickup order is created in Admin, the system will default to creating that order with a status of "new" and will draw from the inventory location selected for that order type in Settings --> Inventory.
Draft orders to not hold inventory, and can be used when you want to assign inventory after the order is created.

Create a draft order in Admin
When using Create Order in Admin, you can select draft as the status.
Draft orders do not hold inventory, so an inventory location can't be selected
Set draft as default for pickup orders
If you have a high rate of abandoned pickup orders, or you just want to sell your products on a "first come, first served" basis, you can enable "set to draft status on creation" in Settings --> Pickup.
Mark the order new after confirming with the customer or when they arrive to collect their order.

Multi-vehicle delivery zones
When using dynamic delivery, orders from zones with multiple vehicles will automatically be created as draft orders. The dispatcher must assign the vehicle used to fulfill the order.
Assigning inventory to a draft order
When you're ready to assign inventory, scroll to the bottom of the order page. Under "Order Status," you will see the default inventory location listed at the top. Click "Assign" to use product from that inventory location.
If you want to choose a different inventory location, click the "Load More" button at the bottom. You will see any other inventory locations, along with indicators if they contain insufficient inventory to fulfill the draft order.
